Low Sodium = Delicious Meals...it's true!

Because of some health issues with our daughter is has been necessary to put her on a very low sodium diet. I panicked a little bit wondering what I was going to feed our family. I have heard that low sodium diets are bland and nasty. Not if you live in this family! Bland just won't do! Everyone eats way too much sodium these days. Our goal is not to exceed 2000 mg a day (less than a teaspoon). So here are a couple of low sodium recipes to help you lower your sodium levels too. I promise they taste amazing!

Apple Pork Chops - Mrs. Dash
1 T Mrs. Dash Table Blend (I didn't have table blend so I used original)
1 T unsalted margarine (I used olive oil)
4 4 oz pork chops
1 C apple juice (I ended up using a bit more)
2 Granny Smith Apples, peeled, cored & sliced (the next time I make this I will use 4 apples)
1 medium onion thinly sliced (again I'm using at least 2 onions)

Melt margarine in a large non-stick skillet pan, add chops and brown lightly, about 2 minutes on each side.
Sprinkle Mrs. Dash on chops, arrange onion slices on top and pour apple juice into skillet.
Bring to a simmer, cover and cook for 25 minutes. Uncover and add apples to pan. Cook 5 more minutes.
Serve pork chops garnished with apple slices, onion slices and pan juices.

I served this with baked potatoes and everyone LOVED it!

Here's the recipe I made up tonight. I didn't have a recipe so I'll just tell you how I did it.
I'll call it Tami's Chicken and Mushrooms and Onions and Goodness!
You'll need:
Olive oil, chicken breasts, dried rosemary, Mrs. Dash, Onion, Sliced Mushrooms, Low Sodium Chicken Broth

In a hot skillet add enough olive oil to cover bottom. Put skinless, boneless chicken breasts down and brown on both sides, sprinkle with a little Mrs. Dash. Remove the chicken for now on a plate. Add onion slices and sliced mushrooms and cook for about 2-3 minutes. Top the mushrooms and onion with the chicken and sprinkle with about a teaspoon of rosemary. You can use more if you like, and I like! Pour in a can of reduced sodium chicken broth and cover. Cook for 10 minutes and then turn chicken breasts over. Cover again and cook another 10 min or until the chicken is done.
Plate the chicken and then pour the onions, mushrooms and juices on top and serve with your favorite vegetables.

It will not disappoint on flavor that I promise you! I'll post more of my low-sodium creations as I make them!! Happy eating! And trust me you do not need salt!

Sound really yummy!!! If anyone can make low sodium food taste delicious is you! I love mrs. dash, I use it all the time, we try to eat very little sodium. I actually like food better without it.
