How to "stretch" your meat


If your family is anything like mine a pound of hamburger doesn't go very far. Tonight I made tacos and with only a pound of hamburger for 5 of us I knew I had to stretch it a little. There is an amazing Mexican restaurant in Draper, UT that adds cubed potatoes to their meat so I though I'd give it a try. I cubed up 2 baking potates (I peeled them first) then I boiled them in salted water for about 7 minutes. While they were cooking I started browning my meat with 1 onion that I had chopped up. I added cumin, garlic, salt, pepper and chili powder to season the meat. After I drained the potatoes I added them to the meat mixture to finish cooking. Not only did we have enough meat to make it through dinner we had enough for leftovers (a favorite in our house). Give it a try. It's yummy!

We make that all the time at our house; we call it Hamburger Hash and we eat it with a corn. So yummy!!
