It's science fair time. My 6th grader decided that she wanted to see how baking powder affected muffins. It was pretty interesting. I liked this project because she could really do it on her own. I helped by taking the pictures.
Batch 4 had 8 t of baking powder in it (double what the recipe called for). They were dry and VERY brittle.
Batch 1 had NO baking powder. Batch 2 had the normal amount. Batch 3 had half of what the recipe called for. And batch 4 had double the amount the recipe called for.
We used a measuring scoop for each muffin cup. So this shows that baking powder really does affect the consistency, density and even taste of the batter!
