World's Best Chicken Salad Recipe

This is what our family ate for dinner last night.  Looks delicious, huh?  Well, it is!  This is THE best chicken salad you will ever taste.  I promise!  When our kids were much younger we'd meet at my sister in law's house each Easter for lunch and an egg hunt.  She always made this chicken salad.  To say I looked forward to it would be a huge understatement.  The Hubs and I were grocery shopping on Saturday and I was trying to decide what to make for dinner on Sunday.  I saw these croissants and immediately knew what HAD to go on them.

I also introduced my mom to this recipe.  She and my dad worked at a university and when she would host big luncheons this is what she would serve.

So without further ado here's the recipe for the Worlds Easiest and BEST Chicken Salad...Oh and btw this makes a TON.  You probably couldn't feed an army with this much but it would come close.  Last night I just cooked up one bag of chicken.  It was probably around 4 cups and it was plenty for our family of 5.

12 C chicken, cooked and chopped (I just defrost the chicken and then boil it.  Make sure it's cooled completely before mixing)

4 C Miracle Whip (ok...confession time.  I hate this stuff.  I will only use it with this recipe.  It makes a huge difference in the taste.)

4 C slivered almonds (I have a child allergic to tree nuts so I set some nuts out in a bowl and we sprinkle them on our sandwiches)

1 C green onions, chopped including the green parts

2 C red grapes (I slice them in half)

4 C chopped celery

Mix the chicken, Miracle Whip and green onions and let sit overnight.  The salad will taste much better the longer the ingredients can sit and mix together.  Just before serving add the grapes, almonds and celery.  Serve on croissants.
